Father's Day Feast: Steaks, Sides, and Something Worth Toasting

Father's Day deserves a proper feast. Not delivery. Not a restaurant reservation. A real meal made with care — the kind that says you put in the time because the person is worth it.


Whether you're cooking for your dad, cooking as a dad, or just using the occasion to fire up something special, here's how to do it right.


The Steak: Reverse Sear Method


If you've been cooking steaks over screaming-hot direct heat your whole life, the reverse sear is going to change everything. It's the technique that eliminates the gray band of overcooked meat and gives you edge-to-edge perfect doneness every time.


Start with thick-cut ribeyes or New York strips — at least 1.5 inches. Season aggressively with kosher salt, black pepper, and garlic powder 24 hours ahead if possible, or at least one hour before cooking. Cook in a 250°F oven (or indirect on the grill) until the internal temperature reaches 125°F for medium rare — about 45–60 minutes. Then sear over the hottest possible heat — cast iron, grill grate, or even a propane torch — for 60–90 seconds per side. Rest for 10 minutes. Slice and serve.


The crust is extraordinary. The center is perfect wall-to-wall. It's worth the extra step every time.


Sides That Hold Their Own Next to a Great Steak


Creamed spinach — a classic for a reason. Sauté garlic in butter, add fresh spinach until wilted, stir in heavy cream and a handful of parmesan, season well. Done in 10 minutes.


Roasted fingerling potatoes with rosemary and flaky salt. Toss with olive oil, roast at 425°F until crispy and golden. Simple, perfect, always right next to a steak.


The Toast


If you've got a bottle of homemade wine that's been aging, Father's Day is an excellent occasion to open it. A bolder red — Cabernet Sauvignon, Merlot, or a Bordeaux-style blend — is the classic steak pairing. Tannins cut fat, acidity brightens the richness, and a homemade bottle tells a story.


If your wine isn't ready yet, a good quality store-bought Cab is exactly the right call. This isn't the occasion to be precious about it.
